Summer is the season for strawberries and, for only 50 calories, one full cup comes loaded with vitamin C, fiber, antioxidants, and some calcium, magnesium, and potassium. Dr. Leo Galland reports that there is research showing strawberries to help stimulate metabolism and regulate blood sugar response. Consuming table sugar can result in spikes of blood sugar levels but researchers found that these spikes can be reduced if the sugar is simultaneously consumed with a cupful of strawberries.
Science Daily reported in 2012 that strawberries were found to counter cholesterol levels as well as blood glucose levels. A team of Italian researchers also demonstrated that eating strawberries increases red blood cells’ resistance to oxidative stress, which is a factor in many serious diseases. So strawberries may be good news for those with diabetes, high cholesterol, or extra fat to lose.
Strawberries, alone, are sweet enough to be a dessert but if you chop a cupful of them into bite size pieces and stir in a dollop of cherry yogurt, a few chopped walnuts, and sprinkle with ground flax seeds and low calorie powdered coffee creamer, you have a luscious, creamy, healthful dessert without the weight gain. You can make fresh strawberries a regular part of your diet by easily tossing them into cereal and smoothies, or adding them with blueberries and sliced bananas for a great snack or waffle topping.
