If you want to have amazing pizza that comes from heart and soul of local farmers then look no further than Rosso Pizzeria and Wine Bar. The family friendly establishment has two locations at Creekside Center
53 Montgomery Drive Santa Rosa and 151 Petaluma Blvd., South Petaluma.
Owner Kevin Cronin and Chef Eric Malvestiti, gave great exclusive insight to what Rosso Pizzeria is all about. Watching Chef Eric make a vibrant colored Margherita pizza was fantastic he described the ingredients, and different types of wood used to heat the brick oven. If you are lucky he may tell you a story of the history of different pizzas from Italy.
“I hate that term farm to table, a lot of restaurants have big banners that say farm to table outside to advertise. The Italians have been that way for years, it’s really a way of life. We have a sign that says, support local farmers but that’s because we like the characters,” says Cronin.
This statement is completely true many restaurants are advertising farm to table to attract foodies to their restaurants. There is no regulation on throwing this term around. However, Kevin Cronin’s restaurant is authentic as it gets.
“We do something different than anyone else does. This spring we’ll have a lunch and invite all the local farmers and they give us the ingredients, pig, lamb and all the vegetables then we create a menu. We take this seriously we close the restaurant for the entire afternoon and learn the techniques of farming, bio-dynamics of farming versus organic farming and everyone is very involved.”
Upon walking into Rosso Pizzeria you will see vibrant artwork that adorn the walls. This is not just for looks but every art piece tells a story about local farmers and ingredients that supply Rosso’s delicious dishes.
One of my favorite’s is Ramini Mozzarella where a beautiful water buffalo is featured by a local artist, who was summoned personally by the owner to visit the farm in Tomales, California and create the work of art.
Owner Craig Ramini supplies the impressive, Mozzaella Di Bufala directly from his local farm and is incorporated into many antipasti e formaggi and pizze. “You must try the burrata and mozzarella cheese they will make love to your teeth” says Kevin Cronin.
I personally tried both and will say that he is right, absolutely melts in your mouth delicious. You can taste all the ingredients in every creation and totally taste the love put into every dish.
