It’s already March and spring is almost here. In addition, St. Patrick’s Day is Monday, March 17. Of course, this day you’ll want to wear green unless you want to get pinched.
Society has been focused on going green for the environment but have you ever thought about going green for the health of your body? When you have diabetes, the challenge is to keep the blood glucose in a normal range. Not too high or too low. It sounds like it is an easy task but it’s not.
Have you ever eaten an alligator pear? The alligator pear is a fruit that contains monounsaturated fat which assists in lowering cholesterol. Also, this fruit improves the blood glucose since it contains omega-6 fatty acids. The long list of nutrients that are found in the alligator pear are vitamins B1, B2, B3, B5, E, K, biotin, folate, carotenoids, zinc, omega-6 fatty acids, fiber, beta-sitosterol, and glutathione. You might have even used the alligator pear in your face mask. The alligator pear is not part of the large reptile family. Here’s a known fact about the alligator pear. The Spanish named the fruit we know as an avocado, the alligator pear.
Avocados are especially good for people with diabetes since they’re packed full of the B-vitamins which help the immune system to destroy harmful invaders. Also, the vitamin E in an avocado will assist the body in resisting infection and neutralize the damaging effect of toxins in the body. Basically, the message sent to the harmful invaders will be; “If you come near this body, you’ll be destroyed.”
The avocado is typically used in flavorful dishes. However, if going green can improve your blood glucose you may want to include the avocado in your salads, sandwiches, smoothies, and soups. Also, never eat an avocado that is not fully ripe. Individuals with latex allergies may also be allergic to the avocado.
Here’s one of my favorite going green soup recipes ~
Juice of ½ lemon
2 cups of light vegetable broth
1-2 cloves of roasted garlic
1 Tbs. fresh parsley
1 Tbs. fresh cilantro
½ Maui Onion, diced
Puree all the ingredients in a food processor and use more or less of the light vegetable broth for your desired consistency. You can serve the soup cold or warm. Serves 2. Enjoy!
Going green is not only good for the environment and celebrating St. Patrick’s Day but for the health of your body.
