Asparagus could be one of the most under-used vegetables in it’s category and also one of the most beneficial. It’s full of antioxidants, vitamins, age-fighting ingredients and disease-fighting abilities.
Here is a simple recipe to get asparagus back on your plate! Your body will thank you!
Asparagus with Cheese Sauce
1 lb fresh asparagus, trimmed, cut into about 1 1/2 -inch pieces
2-3 T unsalted butter,sliced
1/2 tsp salt, or to taste
1 (8-oz) pkg cream cheese, softened
1 can Cheese Soup (low-fat)
1 T lemon juice
hot sauce to taste
3/4 c fine bread crumbs
Toasted chopped nuts or sesame seed, opt
Boil asparagus with salt and butter in enough water to cover; cook over low heat until tender; drain. In the meanwhile, blend cream cheese with cheese soup, lemon juice and hot sauce. Layer asparagus in a 12x8x2 baking pan; pour cream cheese mixture over, stir evenly to combine.
Bake at 350 degrees about 25 minutes or until heated through.
Before serving sprinkle with the toasted nuts or sesame seed, if desired.
